Really 3 nights in Italy, but the last will be in milan as I fly out at 11:30 am.

Coming from Budapest.

I've been to Rome and I will probably do it again sometime for longer than 2 nights.

Florence? Venice?

Anyone know any really good hostels? I'm solo.

Florence, Venice wasn't that great to me but I've never been to Florence so I can't compare the two.

Florence all day. Venice is a tourist trap.

You're flying out of Milan so I'd stick to that region. Cinque Terre would work and if you're into wine a day or two around Barolo would be a sublime experience for a wine lover. A couple of days at Lake Como could work as well.

If you have to go to Milan anyway, go spend some time in the Lake Como area. I can recommend an awesome wine and cheese tour if needed.

ETA: Cinque Terre is a solid choice too.

I'd do Lake Como or Lake Garda. Are you doing any outdoor adventure stuff? My wife and I stayed 5 nights twice on lake Garda and that's where we did our canyoning. One of the coolest things I've ever done. It's also Chianti wine area and there's some wineries you can do tours of. Not sure if lake Como has that but Como would be closer to Milan.

The place that hosted the Olympics is also not far Turin from Milan and I've heard that can be cool. Ton to do in Italy that is amazing outside of the big 5-6 cities.

While I'm sure you can purchase Chianti wine around Lake Como and Lake Garda it is most certainly not in the Chianti wine region of Italy. That region is between Florence and Sienna. Lombardy would be a more accurate description of the wine region.
