The Maui Hyatt is a good property. It is definitely not posh like the Grand Hyatt in Kauai, but it holds it's own. The pool is great and it's a really pretty property. It's located in a great spot, there is a little pedestrian walkway beyond the pool along ocean's edge that you can walk along all the other properties to restaurants and shopping. You have your choice of a bunch of decent restaurants.
We used Trilogy and they had a boat almost right there at the Hyatt along the walkway. They also do great whale watching cruises and dinner/sunrise cruises.I like the scuba and snorkeling there a lot more than Kauai because the water quality is much better. Molokini is the shiznit if you have a full day.
Haleakala Crater is cool. Zip lining and bike riding is cool. Eating Shave Ice is a must. Do it often. Trust me. Lahaina front street is nearby and a must visit for strolling around maybe catching a meal and drinks. And of course, the Road to Hana. Just ask the concierge.

Road to Hana.
Whale watching, depending on what time of year.
Take a surf lesson.
Watch the locals surf on the north side. You can make this your first stop on the road to Hana. Walk down to the beach or out on the rocks. The force of the waves is amazing.
