There are VPN apps, too, for an extra layer of masking.

You can add VPN's straight from Settings>General>VPN

This is so fricking stupid... All this does is wipe Apple and the likes hands clean of any intervention. NOW, the govt or local PDs can't come to them for their customers data.

Right, that's if you know the server you want to go through or if you download a profile (typically from work) that has those settings there already. I'm talking about using a random VPN in the US or even overseas. I would use it when ESPN blacked out games here.

It's standard AES 256 bit encryption. It's good.

Why not? You one of those who subscribe to the notion that NSA approved it because they could break it? That is really dumb. If they could break it, that means some other entity could break it, too. Since our nation's top secret information is secured this way, I find that notion laughable.
