When I installed my home sound system I ran one optical audio cable from the U-Verse receiver to my stereo receiver. I was assuming some (not all) movies ,etc would have 5.1 surround sound signals.
Question is, I have a Sony 850 4k tv with optical output. Would it matter if I connected the tv to my stereo receiver ? I mean, if there is a 5.1 audio signal would it pass through the tv to the sound system ? Using hdmi cable from U-Verse box to tv

Yes it would pass from your TV to your sound system through the optical out. Might be a slight delay so be prepared for some minor timing.

I have everything going to my receiver and then an HDMI out to the TV.

Two problems with optical connections:

1) Doesn't support the newer high resolution formats.

2) Not all TVs will pass a multi channel 5.1 signal over optical.

If I want to have the audio from my TV (TV apps), I have to use the optical to get audio to the Receiver/Speakers. The ARC HDMI port wouldn't work.

Based on his description, the OP does not have that option, hence the (quite common) desire to use the TV as the HDMI switch. As previously noted, the degree to which a TV will pass 5.1 audio from HDMI inputs has traditionally been a very YMMV situation.

I just found a review site that actually tests this, which is a first. Check it out.

Most TVs they've recently tested do pass both DD5.1 and DTS.
