I am trying to set up my two monitors at home for a workstation. At my work office I have two Dell U2415 monitors (LINK ) that offer 1900x1200 resolution. I use a Dell WD15 docking station with HDMI and DisplayPort into the two Dell monitors. It gives me 1900x1200 resolution with no issues.

Now for my problem: at home I have a 2k 27" AORUS monitor and 4k 27" Monoprice monitor. All I am trying to get is a minimum of 1900x1200 resolution like I have at my office. I have tried the following docking stations:
Dell WD15 (linked above)
Anker 575 (LINK )
Dell D3100 (LINK )
Baseus (LINK )

All of which should be able to do a dual 4k setup with ease, much less dual 1900x1200. But NO - I cannot for the life of me get better than 1080. I have tried multiple cords and everything, nothing is better than 1080. If I remove 1 of the monitors, then it projects 2k or 4k on the single monitor. As soon as I plug the second monitor back in, back to 1080. I cannot understand why the bottom tier Dell WD15 docking station can do 1900x1200 at my office, but can't even do that here, much less all the other "better" docking stations too.

Any suggestions at this point besides last resort of buying 2 new monitors?

Same computer or different computer? It could be that the video card doesn't support what you are trying to do.

Looking at the three bottom docks, none of them support dual monitors with resolutions over 1080P

Why do you say that? I read this for the Anker:

Single monitor display: 3840x2160@60Hz via the HDMI port or DisplayPort.
Dual monitor display: 2560x1440@60Hz via 2 HDMI ports, or via the HDMI port and DisplayPort.
Triple monitor display: 1920x1080@60Hz via the HDMI ports and DisplayPort.

Do you keep your laptop open as a 3rd display?

Connect your laptop directly to the 4k Monoprice monitor via usb-c and the 2k Aorus via HDMI to rule out docking station issues. The 5490 seems to be the limiting factor as the USB-C can handle 1 4k 60 Hz display. I would think the addition of the 2nd monitor using the same USB-C port is downscaling both monitors.

You could also try downscaling the 4k monitor yourself in display settings to 2k.

yooooooooooo unplugging the Monoprice from the docking station and plugging it into the HDMI port of the laptop directly solved the issue.

My problem is now solved.

It still doesn't make any sense how this same docking station with both HDMI and DP going into the docking station at my work office could do better than 1080 but those same plugs here at my house couldn't, but now it is a moot point as I have both running at 2k. Thanks for the suggestion!
