On the simulators we work on, we take the pilot's/tailgunner's/fuel boom operator's/etc.. HUD and using keying technology we overlay onto the recorded videos for the recorded flight images of the training recordings so that when these are played back, what the pilot sees and the visual cues he gets are easily viewed when looking at decision points in the recordings. This is not new technology, just how its being applied to consumer use..
