What's the difference between the cheap $15 one and then $120 brick looking models? I don't get it.

Are you comparing similar wattage output? My first guess would be safety and reliability.

IT can be several things but usually power capacity Wave form, and frequency/voltage stability.
For most non critical, low power applications, the $15 ones are fine

I think cost would impact the wattage or capacity to power a specific item. A low cost inverter would not have the capability to power a laptop, whereas, a higher cost one could, as an example.

Ok now I get it. If I want to power my 15 watt guitar amp I need at least a 15 watt inverter?

The cheaper ones are a different type of sine wave - basically the power is cleaner from the more expensive ones so if you have to run sensitive electronics.
Look it up on Wikipedia for a technical explanation
Cheaper ones work for simple things but if it's a radio it will probably buzz
