Racial Identity -- Who determines minority status?

Obviously, as we know, you can identify as what you want.
But with things ranging from scholarships to government contracts based on race, how is one's race determined and proven if challenged?
With interracial relationships becoming increasingly common, this issue will get continually clouded in years to come.
Just from personal experience, I have friends with the following marriages:
White-Indian (red dot)
White-Mexican
White-Japanese
White-Chinese
White-Black
All but the White-Black identify as white. (Side note: The black guy in this relationship is a solid, conservative dude and the white chick is pure trash. They are divorced, not surprising. He only dates white chicks)

When a lot of this foolishness on college campuses came into the forefront, I said that I identified as a female native American. Can I get a scholarship now?

I would like it if we were never asked our race on job or academic admissions applications.
Basically the census should be the only time we check that box.

The issue is who makes the determination and what info they use.
We can all generally agree on what broad group is considered a minority, but who is a member of that group can get murky.

Liberal progressives have used identity as a political strategy to literally divide and conquer. Prejudice will no longer be an issue when people are just people and no longer categorized into social distinctions.

My grandchildren are registered in school as Hispanic because their mother is Mexican. The proof is the mom's birth certificate and continuing Mexican citizenship. But they've never asked to see those documents.

What got me thinking about this is that supposedly minorities don't get opportunities because they are discriminated against:
I know a kid, hispanic mother-white father. Very handsome young man, dark complexion, very ethnic looking.
However, he was raised in white household, very popular at a mostly white school, identified as white, went to college joined white fraternity, dates white girls.
If my daughter married him, I would not consider that to be an interracial relationship. I don't even consider the parents to be in an interracial relationship. I know they don't.
How do we have laws, rules, etc., regarding such a cloudy situation?

Every company I worked for used self identity on applications. You could fill out the section or leave it blank. If someone did fill it out you took them at their word and identified them as what they checked. Yes I even had an employee who identified as Cherokee. He was one quarter and it saved him in a couple of downsizing

No company can ask "race" on the employment application.
