But we celebrate St Patrick's Day and Mardi Gras. Those are not of American origins. So long as they assimilate, what's the problem with giving them a single day to celebrate their culture? I'm fine with it and will join them in it.

The Mexican culture is unique and eccentric. I don't want it to be the status quo here anymore than the Irish, but there's many reasons to celebrate their culture. America is the only other country to really appreciate them, and I think that's a positive attribute of our country.

Which alone is worth celebrating. Yes Mexican culture is clearly inferior to American culture, but this is the same culture that brought us tequila and tacos. I'll give them a day to celebrate those.
