Being my first one, I am not familiar with how most people cook the meat. Any suggestions?

cut breast into strips
soak in whole milk and hot sauce
fry

that is my favorite way, at least

I've also cut the breast into thin cutlets and grilled them and it was alright

Only ever eaten it fried. Cut it up in to "nuggets", breaded, and fried. Tossed it in hot wing sauce as well.

I've never shot a turkey or eaten a wild one. So you guys just keep the breast meat? Are the legs and wings too tough?

You could boil the legs and thighs in crab boil then cut them up and make enchiladas.

We either deep fry them whole or smoke them

Had one brined and smoked last year. It was excellent, tastes a little different, a bit tougher but still taste like turkey.
