Beer Dinner for Family/Friends

I watched an episode of No Reservations when he was in Provence. He did a dinner at the end where he cooked a course, served it, ate, then started on the next course, and did the same. I've also been wanting to cook with beer more, so i decided to do a beer dinner. I am thinking of 6 courses, with cheese pairing between each course.

I recently bought the issue of cooking with from craft beer and brewing magazine.



And i also have The Craft of Stone Brewing, which has recipes for cooking with beer as well.

Don't have the magazine or book in front of me, but off the top of my head, the following are the recipes i want to try with the beer that is made with them

Braised Quail - Porter
Pork Belly - IPA
Braised Short Ribs - ???
Petit Savoy Cabbage - Saison

There were a few others that i couldn't think of off hand. I'll try to post more when i get home today.

Just remembered another recipe had to do with Mussels, i think it was also a farmhouse saison used in that.

May try to create a recipe cooked with oysters and a stout.

I do know i'm having an issue with the atmosphere as the food. Such as, all one genre, like italian. The only commonality so far is they will all be made with beer. Trying to find that one underlying theme and then base the recipes i use off of it.

You could get away with calling all of these French, depending on how you execute them

Same for the mussels.


So.. French food made with beer? Then you can do French wines and cheeses as well.

ah, gotcha. very cool idea. I found a beer/food pairing article once that listed several dishes.

I'll see if I can find it.

Abita has a pretty cool "cooking with Beer" cookbook. there is an awesome shortrib recipe using turbodog that i make pretty often when its cold.

No wines, will be a beer only dinner. Each course will be made with beer and then paired with beer.

I have used this recipe, used a different beer but same technique. Came out alright.


Also did a frenched rack of lamb for some FBDers, that was marinated in coffee, coffee beans, and stout. I'll see what I can find with pics, been a couple years.

I misread your "intermission cheeses" to be wine and cheese. Regardless, the point stands. Those all have French influences and are often served in French restaurants, so if you're looking for a food type, that's the way I'd go.

The beer love here has gotten a little fanatical to be honest.

I don't see where a beer dinner is different than a wine dinner

That said, I hope all of Bug's friends and their spouses like beer.

Very true. I always tend to bring a nice bottle of beer to family events to share. My brothers are usually really open to trying them, but the rest of our families usually do no like them.

Kindof disappointing to pop a '12 Grand Reserve and have people not finish their glasses. It is a risk you take though.

I brew beer at home and i am a "fan" of craft beer. Is that a bad thing?
