Ribs on the grill. No problem on the electric Brinkman smoker. I have made pork rib jerky a few times otherwise.

Brisket or pot roast in oven or crock pot... Can never get it just right, always overcooked

I know it's not popular here, but as an earlier poster stated, if you use Uncle Ben's Converted Rice you will have no problems. It won't "split" like so many like, but it will be fluffy and not gummy.
2 to 1 water to rice ratio. Salt to taste. Bring to boil and then simmer for 20 minutes covered. Turn off heat and let rest for 5 minutes. Fluff with a fork.
Perfect.
