I once made the mistake of eating crawfish at The Orleans casino buffet in Vegas.

My stomach and arse felt pure pain for a day.

Used to work there, so I had the buffet several times while we were prepping for the opening day. The food that was "fresher" wasn't bad (like the prime rib carving station).. but I don't think I'd go there for crawfish. It is easy to get bad crawfish, and I especially don't like them if they've sat for a while. I know lots of people love cold crawfish, but I like them piping hot. Never understood those restaurants that offer it cold the next day.

It's nearly impossible to mess up crab legs. They are already cooked and freeze really well.

Just a quick steam and they are good to go.

They seem like a pretty perfect buffet food. And they aren't cheap.

Yeah I rather it hot but if we have leftovers I put them in the fridge and eat it just like that.
