What is bread enriched with?

Flour enriching was a response to the nationwide problem of pellegra 100 years ago. It's a dietary deficiency disease causing skin problems, mental problems, and eventually, death. Pellegra was very very common in the south among poor farmers who subsisted on corn.

Here's a good blog post summarizing the pellegra problem, how southern pols fought against nutritional enrichment, and how it became standard for all flour products to be enriched in the USA. Great story....
