Did those Pete Carrol USC teams ever get the #1 WR in the country and a 5 star RB in back to back classes?

You don't need to be in the pistol or gun to spread the field nor do you need to be in those the use the read option.

No. But he did get Mike Williams and Reggie Bush/Lendale White/Steve Smith in back to back classes.
Not sure what this has to do with anything though.

They were stacked. They also got Leinart prior to those.
