Anyone got a good chicken and fried rice recipe?

My wife makes a pretty good one. Cook a couple of chicken breasts, and cube them once done and set aside.
She uses our plug in skillet, since it has higher walls and more cooking space. She gets a bag of the frozen peas/carrot/baby corn/snap peas and slices up an onion first. Cook the onion in plenty of butter, then scrambles two eggs in it. Adds the peas and carrots and lets them cook for about 2-3 minutes, then adds a heap of butter and dumps the rice on top. Better to cook the rice the day before, maybe two days. Toss the chicken in at the end. It is a pretty easy thing to cook.
She also found a recipe for the Yum Yum sauce online somewhere and it turned out pretty good. She likes to pour it on the rice before eating it.
