Why do NCAA coaches always get 2nd and 3rd seasons but many pro coaches are fired in 1 year?

Also common in basketball

Recruiting. It's not like they can go out and sign free agents. Usually college coaches are given a chance to get "their" players in the program.

Recruiting

Both ways. Stability is necessary when dealing with younger guys, and when a first year NFL head coach is a disaster and loses the team, there is no considerable movement within the team usually. A lot of those guys will be there for a while and the coach will have to win them back.

In college, the constant is the coach. The players change quickly.

In NFL, the constant is the players (mostly). The coaches are he variables.

Take the Bears. The team is invested in Cutler. It's easier to dump the coach.

If you have a personality conflict in college, the coach can ride it out because the player's going pro next year anyway.

Professional teams are normally owed by one guy. One short patient guy.
