he's worked his way up through the Saints organization and everyone from Mickey Loomis to Sean Payton love the guy

Don't know much about him. Been with the Saints for 14 years. Worked his way up to Director of Player Personnel in 2013. Spent most of his time in the scouting department. Before Pace, the Saints had two scouting heads, Pro and College. He will be the youngest GM at 37. (just read all of this in an article).
According to local media, he is highly regarded inside the organization and him leaving will be a big blow.

well, i'm sure he's a good guy and all, but i'm glad to be getting some fresh blood in scouting to be honest

True. But on defense they first need Mike LB, DE and Safety before corner.
But if they switch to a 3-4, they'd also need DT.
