It all depends on the crowd and what you want. Smash has more to play with and what not as far as the overall experience. A lot of game modes and the music is amazing, which you can change and customize at the stage selection screen.
Mario Kart 8 does what it does and does it to perfection. Easily the most polished, fun, and humorous since the 1st installment.

Seriously, the best answer is both. Both are the best entries in their respective series, and lots of fun for big groups.
If you insist on picking one, it would depend on who you plan to play with. If it's just me, I usually go for Mario Kart. Maybe it's just personal preference, but I find it more entertaining as a single player game than Smash. But if we are going multiplayer, then Smash wins no question.

Mk8 is great if you have buds who will consistently play with you. Only kept me occupied for about 1 week playing single player.

Smash is a more deeper game.
Kart is more fun.
If I had to choose based on entertainment it would be Kart.
Smash online more lags a whole lot also.
