Fried turkey gumbo

Stuck in Arkansas for holidays with zzzzz food. In-laws are not adventurous. Suggested gumbo with leftover fried turkey and, surprise, they went for it.

Managed to find file' at second store we checked. Choices on sausage were Big Easy out of Lake Charles, which looked suspect, and that Conecuh out of Alabama. Did not even consider the typical Yankee brands. After serious study, went with Conecuh. It was pretty decent, to my surprise.

The gumbo was overall a good use of leftover fried turkey. Everybody liked it.

This was my second time doing microwave roux. I noticed both times that oil seemed to separate more during cooking than when I do traditional or even jarred roux. I had whisked it well.

Skimmed excess oil off with spoon. Anyone else have this experience with micro roux?

Oil may have been from the sausage? I like concecuh, however, I find it leaves a lot of oil.

First cook with micro roux was with Savoie sausage. Not very fatty.

Probably my imagination, but micro seems not to incorporate as well. Can't figure any rational explanation for it.

Was still good.

My buddy swears by his fried chicken and sausage gumbo and it's gross IMO

Everytime you open the lid it has an inch or two of pure grease and he never skims it. So gross
