Caramel not Sticking to Apples

SO is trying to make caramel apples.... LOL

Apples have been washed to remove any wax...caramel is nice and thick......just won't stick to them once dried.

Goes on fine and looks great then when they dry most of the caramel has come off & pooled around bottom. Anyone ever have problems with this?

Try cooking the caramel a little longer or refrigerating the apples before applying the caramel to help it set. I've also heard of throwing them in the refrigerator after applying caramel.

When the caramel cools, is it still runny? Might not be taking the caramel high enough. 240. No less. No more. Definitely not more. Let it cool back down to a workable temperature.

Update: She's melting packaged caramels not making from scratch......following the directions on bag. So not sure if she needs to take to 240.

The refrigerating sounds like that may work.
