Poached chicken will work as well as shrimp....look up the vietnamese recipe "goi ga" for a really nice chicken & cabbage salad, loaded w/fresh herbs and a rice wine vinegar based dressing. Cilantro, thai basil, crispy shallots, etc and peanuts instead of almonds.

Cabbage is crazy cheap.
