Pete Giovenco in St Rose. Deer Depot
This. I've used him for many years. He used to set a tent up at his house during deer season and the parked cars, customers, coolers, equipment, etc used to blow my mind. The deer depot he next built is amazing.
I even bought my skinning knives and hack saw from Pete. He uses the best (not cheap). He makes a lot of specialty items (with smoke) with the venison/hog/elk etc. A true Italian who loves his work.

it is about an hour away from you, but I would head to the whitetail butcher shop in independence, la...honestly, it is the best damn deer sausage that I have ever eaten... I know a good number of folks that drive from Mississippi and even Monroe to get their sausage made...
It's good but far from the best.
