Thought I would share an easy recipe I threw together last night. Sorry that I don't have any pictures.
1.5 pounds skinless boneless thighs
1.5 bags seasoning blend (I would normally use fresh but was needing to save time)
1 jar salsa verde
1 cup frozen corn
I can black beans (rinsed)
1 can can cannelli beans (rinsed)
2 small cans diced chilis
1 teaspoon each cumin, chili powder, oregano
1 pack sazon Goya
2 tablespoons badia brand complete seasoning
4 cups water with 5 teaspoons chicken better than bouillon
Dice chicken and season with badia seasoning. Brown well and add seasoning blend. Cook until onions are clear. Add chilies and spices and cook for a few more minutes. Add salsa verde and bring to a simmer. Add stock and bring to a boil. Add beans and corn, return to boil . Reduce heat and simmer for an hour.
This was kind of a throw together invention but it was so good. Obviously it would be better with fresh chopped onions and fresh tomatillos. We ate it with a dollop of sour cream and fresh cilantro but it was good as is.
