I would rather rice dressing for myself, but my wife does make a real good cordbread dressing with some jalops in it, so I'm ok either way.

peas in a roux over rice also know as petit pois. my dad is from donaldsonville and my grand mother always had it and he kept it going for our thansgivings

Cornbread dressing all the way. Make a separate dish of it with oysters in it. Cant go wrong.
