Chocolate or Pumpkin Spice Beignets

I am making beignets for the tailgate on Saturday morning. I usually just make regular beignets with the Cafe Du Monde mix. This morning I woke up and thought about maybe mixing it up a bit and having 2 or 3 different flavors. I've seen chocolate ones locally, and Disneyland sells pumpkin spice beignets in the fall.
Does anyone have any recipes they can recommend? I imagine it could be as simple as adding pumpkin spice or cocoa power to the Cafe Du Monde mix. Any suggested measurements would appreciated.

I wouldn't flavor the dough, but instead add a little filling. Spread a dollop of jam, a little pie filling, etc. on some dough, fold over and press to seal.
Or go hog wild and put boudin or hogshead cheese in 'em, then drizzle w/some Steen's & chopped pecans before serving.

My wife's uncle manages a place thats sells chocolate ones. He thinks they're a novelty and no where near as good as regular. I tend to agree. The chocolate flavor just doesn't blend well with a beignet. I would stick to original. Not everything needs to be jazzed up.
