Finely chopped rendered down andouille is a nice component. Def bread crumb butter mixture on top uncovered last 15 mins or so.

Yeah she's an old dead broad.

I make ten different versions. As I said only thing constant with mine is the hosepipe noodles. I like to uncover it and get the top crispy and almost black.

I also always eat the corners.

I'm not that damn old, just crochety. I can't remember when we didn't have cable, and MTV premiered when I was a small child. Not exactly pioneer days on the bayou. I did register for my LSU classes using the phone (good ol Reggie), but I did not ever stand in line to get class cards (though my siblings did).
