I've seen the usual popular ones (Monsters due on Maple Street, Nightmare at 20,000 feet, Time Enough at Last, etc.) but beyond that I'm still pretty new to the series.

Culture me.

I'm about halfway through the first season right now.

Judgement Night is good.
The Mighty Casey is fun.
The Last Flight seems corny and predictable at first, but gets great fast.

The one that stuck with me when I was a kid watching these was "A Little Peace and Quiet."

"To Serve Man" is a pretty famous one that is memorable.

Just watch them all! You never know if there's some aspect to one that could make you like it more than any other.

The one episode that always stuck with me is the one where the gangster dies and he thinks he's in heaven.

If you like Twilight Zone, I highly recommend the Alfred Hitchcock Hour. It's not as supernatural but it does have the same feel. Liked that more than some of his movies.

Rod Serling was awesome. Amazing writing on that series, and for the time they did the best with what they had.

I liked:

Time Enough at Last with Burgess Meredith.
and
The Midnight Sun about the heat wave.

The one with William Shatner on the plane was pretty interesting but I don't know if that was mostly the curiosity of seeing him as a young actor.

There were some great starts that either started out on TZ or were on it pretty young.

"Hocus Pocus and Frisby" - from season 3, about a gas store attendant who loves to tell tale tales.

"The Bewitchin Pool" -from season 5, two children escape their bickering parents through a portal in their swimming pool

"Deaths-Head Revisited" - from season 3, a former nazi is haunted by his past when he returns to Dachou concentration camp.

"Five Characters in Search of an Exit" - from season 3, five people are trapped in a small cylinder room with no way out.

A lot of good ones mentioned, but no one has mentioned "The Invaders." Loved that one as a kid and I've always remembered that episode.
