Father n law just gave me a bag full of filets. I usually only cook specs and reds. Just looking to try something a little different than my normal fish fry. I usually just dredge them in some chef kd's fish fry and fry 'em up.

Marinate non-wet filets on baking sheet with hot sauce
Meanwhile mix garlic salt and blk pepper in cornmeal to taste in a bag
Put filets in bag and shake
fry at 350 until they float

I like the butter milk idea. Had some catfish awhile back that was marinated in butter milk and hot sauce before dredged/fried and it was delicious.

A splash of hot sauce is a good thing.
