Need Party Food Ideas

The subject says it all. I'm throwing a tailgate Birthday party for the November 8th game and looking for food/drink ideas for both teams. Finger foods, main courses cocktails. Any Ideas?

Is this an actual tailgate party on campus? Or just a birthday party not on campus?

Do you plan on grilling during the event or do you want something prepared ahead, so all you have to do is heat while you enjoy the company?

mini muffalettas:
olive salad
salami
ham
mozarella
and bread
cut up into small finger sandwiches.

I live in Florida and would have LOVED to have been there, especially for my birthday. I'm doing all my food prep the day before and the produce I'll handle that morning. As far as grilling goes, I usually do the standard, burgers chicken stuff like that But with no one knowing the exact time (from what I know it'll be announced this saturday)I hate that everything is up in the air. I would love a good recipe idea I can plan ahead possibly using a crockpot so it'll be ready by game time.

You need to do a one pot meal that you can heat on stove or pop in the oven and heat up as well as some good finger foods.
For entree ideas:
Grits and Grillades (can prepare ahead and reheat)
Shrimp fettuccine (can reheat in a foil pan)
Chili
Gumbo
Pulled pork sandwiches
Oven Brisket sandwiches
Taco Bar (self serve meats, tortillas, toppings.Impress with some carne abodoba)
For finger food ideas:
Dips and chips
hogshead cheese
bacon wrapped shrimp
bacon wrapped asparagus
Wings
Marinated shrimp
sliced Sausage and mustard
Guacamole
Hummus
Grape Leaves
Cheese trays
Crab dip
Stuffed Artichoke

Pick a theme first--mediterranean, or italian, or whatever. Try to have the food "related" along some sort of lines. Otherwise, it's a big random collection of things...not my favorite kind of spread.

Foie gras and jam sandwiches.
I had this the other night for dinner but I've made it several times for parties.
A very good, soft white bread, sliced. I buy a good one at Whole Foods and let them run it through the slicer.
A good foie gras mousse. Whole Foods has this as well. About an ounce or two per sandwich so I get a couple of them. They are not expensive.
A good jam. I prefer seedless blackberry but I've done them with apricot. One kind of tart.
bit of good sea salt.
Spread mousse on one side, jam on other, touch of salt, make sandwich, cut crust off, cut into fours and serve.
You can do a whole loaf, which is a bunch, for about $25.00 and it will disappear rapidly.

That's exactly what I'm trying to do. I don't know specifically what to make as far as Alabama goes, but I do have some great ideas for the Louisiana side. Now as far as cocktails or drinks go, I haven't a clue

You guys are giving me great ideas!! Thank you so much. Now...if only...there was a time....SET!! Why wait till the 18th (supposedly) to find out. Or this party will drag on and on!! NOT that it's a bad thing, AND it's on a Saturday
