Best meat to overcook on a grill?

Really wish I didn't have to ask this. My wife is making us go to my sister-in-law's boyfriend's place tonight to grill. The set up is that they are making sides and everyone brings their own meat. Now I've never seen this guy grill but I have seen him cook in a kitchen and he dramatically overcooks everything. Apparently he's very paranoid about diseases. So what meat should I bring? What is somewhat edible if cooked past well?

Filet can usually take an overcooking and still be edible.

That said, if it's on the grill, why not just watch your meat and then tell him to take it off the grill for you when you think it's done to your liking?

boneless/skinless chicken thighs. no matter how long you cook them they still tend to be juicy.

When he is done burning everyone else's meat, throw your steaks on and cook to your liking which should be at most med rare.

Maybe you could talk him into a reverse sear. Sell him on the fact that it's a long cook.

I suggested this to my wife and she thinks it would be insulting to him to not allow him to cook it for us. She's all about being proper. I just don't want to eat leather.

ETA: thanks for the suggestions everyone. Going to the store to look for some chicken thighs and maybe sausages

Just think how great it would be to cook a 1.5" thick steak rare, cut it up and let the blood run out...

This. Maybe even wrap a piece of bacon around some to make sure they stay moist.

I fried an egg over easy and ate it in front of him once. He was absolutely disgusted when I used toast to sop up all the yolk.

Sounds like my mom and sister. Their meat can have not even a slight tinge of non-grey in it when done. It is, to me, like eating a peice of leather. Dry... and just nasty. And they won't look at mine or my wife's steaks or burgers... don't see how we can eat them with pink showing. I don't get them.

experts will say that ribs should not fall off the bone because it is then technically overcooked. that is exactly the way i like it

My wife's family comes from a part of the world where they tend to overcook all meat... Even steak... It drives me nuts.

It is not insulting to ask him to not cook your protein longer than you like. Just like if he was at your house it would not be insulting for him to tell you he prefers well done. Adults can do this and not get their feelings hurt. I can have ten people tell me how they want it and I sure try to accomadate.

I have no problem bringing a steak and telling him rare. But I do doubt his ability to pull that off and I know if I stand by the grill basically teaching this guy my wife will get upset that I'm belittling him. Plus I don't really like the guy and want to spend as little time as possible talking to him. I think the best course of action is to drink a beer, eat my chicken legs, and get home early.
