Why does IQF fish taste like rusty nails?

Almost every time I buy fish individually frozen it tastes like rusty nails and metallic? Anything you can do to take that taste out of the fish? The last few times I have bought tuna, grouper and amberjack from Rouse and Albertsons in individual shrink wrap packages it tasted like shice!

Probably!!
I can't escape the metallic taste on individual packaged fish portions. Defrost, lightly season then either pan sauté or grill outside. Either way it's like sucking on nails or a chunk of the tin roof (not the beer...a real life rust tin roof). Is there something you do to make that taste go away?

Don't freeze it and concentrate the liquid. Why would you buy fish to freeze?

IQF fish isn't evil, just like IQF shrimp. Thaw in water, slowly, and cook it with a good technique . I'd suggest bronzing. Don't pay any mind to trolls rising to surface baits.

Try soaking in cold water with a few tablespoons of baking soda. Works to take the iodine taste from shrimp so it should work for these metallic tasting fish.
