How do they "cook" the quesadillas at coffee rani?

Whenever i make them they turn out soggy. How does coffee rani make theirs? Bake them?
A few other coffee rani questions....anyone know the recipe for their keywest cooler and their honey lemon vinaigrette(? Thanks!

Obvi you go there frequently, why not just ask 'em? It might be a panini press-type contact grill. If so, it would be very easy to replicate at home.

How do you make them? I don't know how the other place makes them, but I put mine on an electric griddle with a little bit of olive oil at about 300° with a layer of cheese. Once the cheese is melted, I add whatever else will go in it (meat, pico, etc).
Don't use too much olive oil on the griddle. That can make it soggy.

I do mine similar but use a cast iron stove top griddle. Key is to get the cheese melted first. Sometimes if the oven is on for other reasons I'll put them in the oven on broil for a couple of minutes.

Only reason I use the electric one is because I can knock out 2 at a time. But the principle is the same.
