I've done a bit if research, but still not sure where to start. It will mostly be used for outdoors hunting/fishing/hiking pics and other random shots. Any pointers?

Just bought a Nikon D5300. And by just i mean 5 days ago. So far I like it a lot. I also bought 35mm f/1.8 AF-S DX NIKKOR lens with it. My advice would be between Canon and Nikon you cant go wrong, so just go with what feels right in your hands. Also purchase and read this book, Understanding Exposure

nikon or canon, choose your flavor, they both have entry level models at that price. if you can, wait a bit, Photokina is mid September. New releases are usually either march/april or photokina time. Save your bucks for a good lens, or buy a body only and start with a good nifty50 lens

I recently bought a Cannon T3i that I got a really good groupon deal on. Still trying to learn the ins and outs of the camera, but I've gotten a few nice shots so far.

most aren't actual slr.

But it seems to me that both Canon & Nikon offerings are basically on par, both having equivalent offerings at different price points.

Nikon D5100 or D3300 (I'd choose d5100 with kit lens and 35mm or 50mm fixed), Canon eqivalent, or Sony or Fuji mirrorless like the Sony NEX 6 or Fuji X-E1.

The mirrorless cameras are much more compact and easy to carry, so might work better for what you are trying to do. I hate digital viewfinders, but others are very pleased with the quality of the mirrorless cameras.

Something that tolerates water and is light. Frankly this is the perfect application for a quality point and shoot cam instead.

Yeah, if you dont plan on buy a bunch of lenses, Pentax might be a good choice for their weather sealing

Definitely go to the store and feel it out. Once you pick a brand, nikon, canon, whatever, it'll be more expensive to switch, (if you start buying lenses)

I've been with Nikon for 5 years now, and have upgraded the body from the entry level camera I started with. And I'm still able to use the lenses I picked up along the way.
