Didn't check the link yet but what you described is it. It's pretty amazing at the houmas house. Thanks for the help.

Should be pretty simple, then. Fry the eggplant medallions, top them with the crabmeat and top that with hollandaise. If you've never made hollandaise, google "blender hollandaise". I make it in the blender all the time. Easier and faster. If you need to hold it a bit before serving, put hot water in a thermos, empty it, dry it quickly and pour in the sauce. Top it and it should hold for several hours.
