Please give me your fried eggplant and lump crabmeat recipes.

Is it something like fried medallions with jumbo lump on top with some sort of sauce? Hollandaise maybe?

Should be pretty simple, then. Fry the eggplant medallions, top them with the crabmeat and top that with hollandaise. If you've never made hollandaise, google "blender hollandaise". I make it in the blender all the time. Easier and faster. If you need to hold it a bit before serving, put hot water in a thermos, empty it, dry it quickly and pour in the sauce. Top it and it should hold for several hours.
