Got 10ft 1/2" PVC pipe. Cut into 2 pieces (a 6ft and 4ft piece) with the plan to use the 6ft and then connect the 4ft piece if I need. Well I bought 2 T's and cut the tops off for the stakeout pole to "snap" into them. I want to install the T's on the side or top of the kayak. Want to drill holes, put the T's in the hole then glue/seal them in place. What do you suggest I glue/seal with?

I used to do mine similar to this.

Stake out pole connected to a line with a float on it, that line connected to my anchor trolley with a karabiner.

Stick pole in the mud, use the anchor trolley to position yourself how you want, when fish on disconnect the karabiner from the trolley and go for Cajun sleigh ride. Paddle back to the float on the stake out line and reconnect. Repeat process.

Why couldn't you get a couple 6"+/- pieces that are slightly bigger than the one you plan to use and cut them longways slightly past half, then screw those pieces into the side/top of the and then snap your pole into that?

I use the factory Jackson rod stager tie down but it could be rigged on other boats. It is a tie down made from bungee between a tube clamp and a J-hook.

Here's a pic of the rod stagers I found online. This one has a fly rod but I put my 8' stake out pole in the same location:

Those poles don't get in the way when you catch a fish?

This. Groove on both sides of the boat. No extra crap to attach to boat, just fits in, slide bungee over it to secure, easily comes out.
