Did some St Louis style pork ribs yesterday.
Used Myron Mixon's rub recipe:
•1 cup (packed) light brown sugar
•2 tablespoons chili powder
•2 tablespoons dry mustard
•2 tablespoons onion powder
•2 tablespoons garlic powder
•2 tablespoons cayenne pepper
•2 tablespoons kosher salt
•2 tablespoons coarsely ground black pepper
Pulled membrane off the back of ribs, and for first time applied mustard to the ribs before adding rub.
Then put them on the Weber 18.5 at 225 for two hours, then pulled off and one set sprayed with apple cider vinegar and hot sauce, the other rack I put brown sugar, butter, and tiger sauce on the ribs, and sprayed, then wrapped and put both back on the smoker for couple more hours. Took off and put a little sauce on them for finishing touch.
Turned out pretty good, the ones with the Tiger Sauce/brown sugar had a little bite to them. All were tender and tasty.

I smoked some chicken thighs, drumsticks and sausage. I slice the sausage down the middle to accept the smoke.
I like to smoke chicken in pieces. It's easier to deal with and the smoke gets into it more.
Apple wood chips, for me.
