It's a couple of years old but a good read. They were and still are very fun to watch. I would also suggest reading Pepin's La Technique.

Great article! I happen to have seen the hamburger show not too long ago. I've mentioned it here. She incorporated chopped shallots into the meat using a fork so as not to overwork. I've done the same since. Good eating. That woman was something else.

I saw that too. They run that series on LPB3 Create. I'm watching Cooks Country now. They argued about garlic a lot too. Both were/are great. I saw Pepin cooking on Movable Feast the other day. That's a great show as well.

This is the beef/hamburger episode. Such a good one. That simple steak she did with the butter/stock sauce had my mouth watering.
