Quick Tortilla or Tamale Soup Recipe

My Mom made Pioneer Woman's Tortilla Soup recipe over the weekend. Tasted pretty good, but I'm not a big chicken or black bean lover, so I made it last night with some changes.
Here's the recipe.

I omitted the chicken and used all of the seasoning for the soup. I probably more chopped veggies than the recipe called for. I didn't measure.

I used the mild Rotel diced tomatoes because the original can be hotter and they aren't consistent. I like to be in charge of the heat and I wasn't looking for too hot.

I omitted the black beans and the corn tortillas.

I had some wonderful tamales on hand, so before serving, I put in the bowls some shredded jack cheese and sliced tamales I'd steamed in the microwave. I added the soup, gave it a good bit of fresh squeezed lime, chopped cilantro, sliced avocado, a dollop of Daisy and some fried tortilla strips I had that are salad toppings.

The end result was a darn good bowl of tamale soup made pretty quickly and easily on a work night.

ETA: I also didn't use any water. I used all low sodium chicken base/stock.

I really liked it with the tamales in it. I didn't simmer them in it because I didn't want them to break apart. I didn't add the onions as a garnish because I had a good many in the soup, but I might do that when I have it again in a few days. The lime juice was a definite good addition.

Going to try that this weekend. Will report back with results.

I will add jalapeno or anaheim peppers instead of bell peppers.

I almost added some roasted jalapenos, but I was in hurry and didn't roast those. I thought about a little chipotle and sauce, but didn't do that either. It's an easy recipe to conform to your personal tastes. Since I'm not a chicken person, I might do pork instead of chicken the next time if I don't go the tamale route, but the tamales were a fine addition.

BR, I saw in the WFDT thread that you made a chicken tortilla soup. Not sure which one. How was it?

I hate the trend among food blogs making you scroll through fifty or so pictures of "how to pour water" or "what a tablespoon looks like" before they show you the recipe

I understand pictures and shite make your blog look better, but at least post the recipe near the top so I don't have to wade through your shite.

That being said, the recipe does look tasty and I've been wanting to introduce my wife to tortilla soup. I may try it with vegetable stock.

I like the pictures. Not all of them are necessary, but I like them and someone who doesn't cook much at all will find most of them very helpful. I agree with you on the location of the recipe, though. I'd like it at the top. It's easy, however, to scroll quickly to it.

I think it would be fine with a vegetable stock. Are you making a vegetarian or vegan version?

yeah, it'd be a vegetarian version. I like ordering the tortilla soup at Mexican restaurants but it's always made with chicken stock so I can't share.

I used a mild rotel, lime juice, and rinsed the black beans. Also used half the amount of black beans the recipe calls for. No chips either.
It had shredded chicken, though.

Yogurt and avocado topped it off. Good stuff.

I think it would be fine without the meat. Lots of flavor. Tasted good to me before I ate it over the tamales with the cheese and the sour cream, but those things made it even better.

Glad it worked out. It's a very adaptable recipe. I'll try some yogurt next time I make it.

i have been thinking of making PW's tortilla soup recipe, printed it out a few weeks back.

my ex gf's mom made the GOAT tortilla soup so i have been semi-craving it for a couple years now

did you find the cornmeal necessary?

The cornmeal gave it some body, but it's still a bit of a brothy soup rather than a thick soup, which is what I prefer. It gave it a bit of flavor, as well, but not enough to make a huge difference. If you cook the tortilla strips in the soup, you probably don't need it. You can also use masa instead. I added tamales, so I could have done without the cornmeal, but didn't think of that before I decided on the tamales.

Looks great! I also thought corn would be a good addition for those who like that in Mexican soups, especially now that fresh corn is coming out.

It's a good base for a Mexican soup because nothing needs to be exact and you can add your own flavors. I still think some roasted peppers, mild or otherwise, would be a good addition and maybe some toasted ground peppers.

I'm glad it came out well for you.

I also used the new lime and cilantro flavored rotel. Added raw red onions and crushed tortilla chips after.
