Fishing well heads for specks....

Is there anything you look for specifically or is it just trial and error? A couple weeks ago we were in cocodrie and it seemed like we were more successful at well heads that had birds sitting on them when we pulled up.
Also what is the exact purpose of these well heads in the production process?

I like the individual wellheads with the jackets over the larger platforms.

Some of the wells have shell pads, which the drilling rig will sit on. So of course that changes the muddy bottom into a reef. They are usually 250 x 100 or so. Since the well head is in place it means it's a producer. There will be a flow line coming off of it for production.

Bingo. the key is moving around the jacket/wellhead until you find the fish on the shell pad. Sometimes they are 100 yds off of the rig. If you fish out there enough, you know where the shell pads are. I still haven't got this figured out all the way.

Like others have said there is a shell pad underneath them now whether that has been covered by mud/sand over time who knows as some of these things have been out there 30+ years. Also the pilings have growth that attracts bait. Best part is that there are so many of these dotting the cocodrie area that you could bounce around from one to the other and pick up some fish and not be bothered by the armada of assholes at the other well known spots

A well head is pretty much what it says, it's the top of a well. They have a rig (jack up boat in these situations) on location when drilling/completing the well, and they basically button up all of the "plumbing" and they can then move the rig off of location. So you're left with this pipe coming out of the ground that's tied back to other production platforms and pump stations, etc. until it gets to it's final storage location to be brought to the refinery. That leaves a lot of structure in the area that draws bait and target species. Same as offshore rigs, just on a smaller scale.
