If Mace Windu had taken Palpatine into custody rather than try to kill him...

Anakin believed he needed Palpatine to save Padme.
He might not have killed Windu then, but he still would've turned to the dark side at some point.

They would've have been able to take him into custody. He would've killed Windu and Anakin if he thought Windu wasn't going to try and kill him.

Very possibly. But I think Obi Wan not being there at the time contributed as much as anything. If he could have just talked to Obi Wan once after learning that Palpatine was a Sith then I think he might not have turned.

Anakin would have helped him escape later down the road. He couldn't stay away from Palpatine because he was so struck with fear of losing Padmé and the only person who supposedly knew how to save her was the emperor

He would have to have been taken into custody and Anakin would have to be separated far from Palpatine after things got sorted out.
