In Need of a good Crawfish Fettucine recipe

Big Joe’s Shrimp or Crawfish Fettuccine

· 3 sticks of butter
· 2 onions
· 2 lbs of peeled shrimp or crawfish
· 1 lb of Mexican Velveeta cheese
· 1 pint half-n-half
· ½ cup flour
· 12 oz pack of Fettuccine Noodles
· Parmesan cheese
· 1 pack shredded mex cheese

1. Sauté’ onions in butter until tender.
2. Add seafood and cook down 10 minutes.
3. Add chopped Mexican cheese.
4. Mix half-n-half and flour, then add to cheese.
5. Cook on medium, stirring often, until cheese melts and thickens.
6. Partially boil noodles, drain, and add to mixture.
7. Pour into greased casserole dish.
8. Sprinkle layer of parmesan cheese on top.
9. Add shredded cheese to top.
10.Bake at 350 degrees for 30 minutes.
11. Let stand for 5 minutes before serving

I'm making a large batch for 50 or so people later this week for my daughter's graduation. I'll try and remember to post my process.

One thing I forgot to put is cut the sauce in half with water before adding the pasta.

Would need to google, but Semolina's crawfish Ronan is phenomenal and extremely easy to make.
