Thinking of cooking one tonite. This is my recipe I always use, of course if I have fresh veggies I always sub those for frozen or canned.

2lbs beef roast-cut in chunks & browned
2 boxes of beef broth (or 2 qts of homemade stock if I have it on hand
2 bags of frozen mixed veggies
Baby carrots
Green beans
Onions
Garlic
1 large can of diced tomatoes
V8 juice or a can of tomato sauce
Macaroni
Seasoning

Nothing fancy but it makes for a damn good soup

Probably going to cook some too. Yours has everything I put in mine and then some. Mine is a little more lean on ingredients due to the wife not liking beans

I don't use any frozen vegetables or garlic.

If it doesn't have turnips and chopped cabbage cooked down in it, it doesn't have the old fashioned flavor of veg soup to me. I use turnips in place of potatoes. No pasta unless it's added just before serving. They get too mushy for my taste.

I use shoepeg white corn also.

It is not veggie soup without turnips in it. I don' put mixed veggies in one preferring to put im my own mix. Fresh green beans are in the pot with chopped tomatoes. After the beef is browned a bit of salted pork to brown for a minute then a mirepoix is added to the pot along with broth.
