I make a thin paste for lamb chops and ribs, whether I grill, pan sear or broil. One bunch of parsley, Italian , several springs of rosemary(leaves only), a few cloves of garlic and 1 flat of anchovies go into the food processor. Drizzle in evoo until you have a loose paste. Season with fresh pepper and Cavender's Greek seasoning to taste. Apply to the meat liberally and grill, sear or broil.

Can honesty say that I don't think I have had lamb spare ribs. Do they go by a different name maybe?

It was a lamb purchased through a 4h fundraiser. I think i will do an herb paste like mentioned above and cook them in foil for 2 hours over indirect heat. Take them off and cut them individually then put them back on the grill to get a little char.

Those crawfish look better every time you post them.
