Anybody Gather and Eat Thisle?

I have a nice big bowl full over here. Little Apple Cider Vinegar, Salt and Pepper and you have a nice snack.

Relatives of mine actually used to cook the greens down like spinach....salt, pepper, and olive oil...

Damn...... must be a bitch to get all the thorns off. We have an empty cow pasture with hundreds of them. They a bitch to clean though.

Do you cook it, or just eat it raw? I know it's edible, but I've never tried it. My pet tortoise, Poki, loves the leaves.

Cut the top off, run your cane knife down the side knocking all the picker part off, cut it way down low to the ground with you cane knife, peel the stalk with a vegetable peeler, cut into rings, salt, pepper, and a little vinegar....... I eat it raw.
