I've always been a humbucker guy. Never given a single coil guitar much of a chance and I want to branch out a little bit. What's your favorite single coil pickup and why?

P-90s Crunchy sound.

Honorable mention to Burns Tri-Sonic. It has a beefier sound than typical single coils.

Old school fender Strat pups. I'm pretty simple

For buckers, I'm a big fan of Rio grande Texas BBQ pickups. They sound seggzy.

j.m. rolph '56. his pickups are as close as you can get to what fender put in their strats years ago.
according to rolph, the '56 a little hotter than other 50's era pickups. extremely clear & articulate. the top end is bright but not ice pick like. his pickups are worth the wait.

Fender Custom Shop Fat-50s

ETA: I upgraded my Japstrat with these and it completely changed the guitar. Cleans are very glassy and position 4 is super clucky, like a good strat should sound.

The output is lower than other types of single coils, but I just turn my amp up to compensate. If I really need an "extra push over the cliff (to quote Nigel Tufnel)" I kick on my Fulltone OCD.

SCN like the newer American Deluxe Strats have are pretty sweet.

Gold Lace are very nice aftermarket (and were installed on some Fenders at the factory, IIRC).
