Finally ate at Maximo's grill.

I've only eaten at the bar and in the front room, and since the janky bathrooms are upstairs I never really had a reason to go back to the grill area. From the front room the grill looks super cool, the level of the dining room floor is higher than the floor behind the grill bar so it looks like you're getting a stadium view on them cooking. That much you can tell from just peering back there, and I thought that was neat touch.
So last night we walk in at about 9:00, place is empty, and we ask to be seated at the grill. Anticipation was high...it was kind of just OK in appearance, a bunch of commercial ranges butted end to end and a grill surface on the far end, normal commercial hood...definitely nothing to show off. The bar stools are strangely low (for your legs), but at the right height for the bar surface.
Watching them cook was awesome though.
We ordered a 5 item salumi e formaggi plate, but the waiter told us what they had received new items not listed on the menu. I just told him to make us a plate with 3 cheeses and 2 meats. He told us what they were but I wasn't listening...good stuff none the less (I know, great review...). I went with a couple and she ordered the Pasta Rosa. Crazy good dish with hand torn spinach pasta, maltagliati, and shrimp. The same chef prepared that and her husbands dish, Veal Piccata, right in front of us. We saw no other food being prepared (outside of them plating our other dishes). The Veal chop was a T bone and it was cooked in a frying pan. It looked bad arse, but I don't try other dudes food so I can't comment on taste.
They have small and large pasta offerings, so I asked if they'd prepare a large beef Carpaccio for me...dude said no. Dammit, I love raw beef. I got it anyway and ordered a Caprese salad to accompany it. Both were spot on, but I wish I had a pile of beef instead of a thin sheet of it.
We ordered a bottle of wine, though the wine by the glass would have been half price.
The food was excellent, the grill wasn't spectacular looking but it's impressive to watch them make your food, I love the 8th grade gym bathrooms...
Would go again. Probably sit at the bar next time.

Try their Contadina(off menu sampler plate of meats)..
I used to get Joey Distefano to make a similar sampler plate with some angel hair alfredo
I enjoy Carraba's Trio Sampler too..
More protein and also less pasta-monotonous

Their Osso bucco is the best I've had at a restaurant.

The best place for fried chicken in Laffy is Lafonda's.
