I want to learnt to use a smoker.

Where do I start? Do i need special materials to build one? Where do I get said materials?

I don't have a welder.

But I've been debating getting one for a while and this might push me over the edge.

I built on myself. Used an existing firebox that I didn't use anymore and stuck it to the side of a steel box I made from some 3/16" plate.

An alternate option would be to build one out of brick and mortar with the fire low, a baffle plate in there for heat dissipation and the rack up higher. Then maybe a steel hinged lid. LSUBalls posted some pics a few months back of one that he uses like this. Pretty sweet setup.

Either way you choose, get ready for a steep learning curve and lots of research.

If you have a weber and want to learn how to smoke, start there. Then if you want to get "serious" buy/build a smoker.

Dave Lineback's serious Lexington NC brick smoker....boom.

--------------------For the Weber:

small wood chips (not chunks) on top of burning charcoal.

place a drip pan in the middle....then put coals on either side......only about 10 briquets on each side.


Need to smoke the butt, or turkey, at around 225 degrees.

10 lb turkey is the largest you should go for smoking.....5 hours....or until temp is 170 or higher.
7 lb butt......it took me 11 hours to get the meat to 180....


I use apple chips for white meat. Mesquite / hickory for dark meats.



HAD THE BEST TURKEY i have ever had for thanks giving. So, so good.



Youtube has some good clips on how to smoke meat in a weber.





eta////// you must hydrate self with beer while smoking to get good results. It's like golf or pool.....you do better the more you drink.
