No secret recipe we use 1 pack of the deep south brand green onion sausage mix, add 2 bundles of green onions to 25 lbs of meat.

The summer sausage is a kit.

2 lb bags for breakfast sag? Looks great. Did you smoke the green onion or just fresh?

Summer Sausage are a little better than 5lbs. We used 25#s to make it. They should be 5lbs each but they are overstuffes a little.

All sausage is fresh other than that.

We stuffed 125lbs green onion sausage, 50lbs of jalapeno cajun and 25lbs breakfast sausage. We also grinded 175lbs of ground meat. Thats all to be split between 4 peopls from 6 1/2 deer

Yum, looks tasty. I'd love to do that but don't produce enough deer meat to invest in the equipment.

How'd you get 1/2 a deer?

Also, where'd you get the summer sausage kit? I made some once from an internet recipe and it was a waste of meat.

1/2 of one was cut into roast.

I honestly don't know how the summer sausage is going to be. My buddy had made it before and he said it was good.
