Barley-an under-appreciated item

I love barley. Especially in a soup. So good.

No. My only experience with it is in soups from a can.

That's how I came to my conclusion. I would like to learn how to cook it and incorporate it into things.

I use it in soup. I buy medium grain and it takes a longer time to cook than rice but it's more hardy so you can put it in earlier.

I've made mushrooms and barley like a pilaf and I've made barley and black bean burgers which are pretty good. Use it in salads etc...

Go to Whole Foods bulk aisle and try some of the other grains too. Worth experimenting with.

And they have some unusual beans as well. Try cooking some red eye beans.

It's so good. I used it in a soup over Christmas. Turkey stock from the one I smoked for the holiday, several bottles of porter, some white wine, carrots, celery, and finished with a boatload of barley. One of the best soups I have ever eaten.

Add mushrooms to that soup and some leeks.
